Running Windows Server 2008 R2 and hope to log X-Forwarded-For request header in W3C logs.  How do you configure this?

Windows Server 2008 R2 is end of life, so you should move away from it immediately.

The legacy Advanced Logging is the way to go https://docs.microsoft.com/en-us/iis/extensions/advanced-logging-module/advanced-logging-for-iis-custom-logging
