Web Deploy and large content

I am planning a website migration from IIS6 to IIS10.
There is one default website and the size of the content in \inetpub\wwwroot folder is approx 800Gb - PDFs and JPGs.
Is Web Deploy 3.6 still the method to migrate to a new server (2k3 -2K16)? Are there any issues if backing up/restoring this much data?

According to your description, I suggest you to use webdeploy archiveDir provider when backing up the content of sites.It will create a package and back up in this target folder instead.You could use command as below:
msdeploy -verb:sync -source:apphostconfig="Site1" -dest:archivedir=c:\archive
msdeploy -verb:sync -source:archivedir=c:\archive -dest:appHostConfig="Site1",computerName=NewServer
