Greetings, I have been given a group of Hyper-V SQL Servers created from a base image, this base image is Windows 2008 R2 with SQL Server 2008 R2 installed. As part of this base image, IIS has been installed. From a surface area and security perspective,
I would like to remove IIS but have had a difficult time finding anything official on how to do so. The server(s) will strictly be used for SQL Server, no ftp or other IIS features will be used. Anyone have a link to supply that will show what needs to be
done to remove IIS?

Have you checked the IIS Net Faq
If you look at item 1 information:
The resolution is to completely uninstall WAS before IIS reinstallation:
1) Uninstall WAS - Uncheck the whole child options for the parent node "Windows Process Activation Service" and below.
2) Uninstall IIS 7.0.
3) Reinstall IIS 7.0.
If you use 1) and 2) and not 3)
you should now have removed IIS.
This does require a restart.
The exception for above removal would be you have shared configuration that uses IIS.
You then have to remove the shared configuration and do 1) and 2 and not 3).

Thanks for the reply, but what I am needing is how to perform step 2, uninstall IIS, need the details here.

If you look at IIS Net Library Guide
and figure 4 and un-select the check boxes for Feature items for Web Server
in the Server Manager that will be part of the uninstall for the GUI Tool.
You will need to do a restart of the system to finish the unistall.
