You can use IIS Manager (the simplest way) to remove/delete web sites you have already created. You will get flexibitlity to remove the application/site (which will delete the entry from IIS configuration files) or delete the content too.
Hope this helps.

What you can do is after you uninstalled IIS. go to inetsrv folder, and delete everything there.

If you uninall Windows Process Activation Service, the files in the inetsrv folder will be automaticaly deleted, it will peform a "completely" IIS uninstallation.

oOooo new feature in win7? coz this doesn't work on Vista.

It is very much available on Windows Vista OS. Please go to 'Control Panel->Uninstall a Program'. On the left hand side click on 'Turn Windows feature on or off'. The list will show you 'Windows Process Activation Service'. If it is checked uncheck it and
this will uninstall the feature.
Hope this clarifies thing.
